White Shahi Paneer



I do not have a story for this recipe. I do not remember the moment I made this. All I know is this is my recipe, created totally by me and super simple. I hope you enjoy making this as much as I do. It’s super easy and has very few ingredients.



Here is what you need.

1 table spoon oil. 1 medium sized onion sliced. 4-5 garlic pods 4-5 green chilies 1 inch cinnamon stick 1/2 cup cashews 2 cups cubed paneer 1 cup half and half 1/2 cup water 3/4th tablespoon garam masala 1/2tablespoon sugar 3/4 tablespoon salt. 1 tablespoon Kasturi methi. A pinch of saffron to garnish.



Lets get cooking

1. Heat oil in a pan. 2. Sauté onion, garlic, green chili and cinnamon till onion browns 3. Add cashews 4. Blend in you food processor! I added 5 cubes of ice to hurry the cooling process. 5. Make sure the the paste is smooth. 6. Put this back in the pan but make sure the pan is on medium low. The gravey will start to stick because of the cashew if it’s too hot. 7. Also rinse out the jar you blended in to make sure you don’t have wastage. 8. Add half and half with water. You can always adjust the quantity of water to you desired consistency. The gravy does thicken after cooking. 9. Add the garam masala and mix with a whisk to make sure there are no lumps. 10. Now sugar, salt and kasuri methi goes in. I am always conservative with adding sugar and salt. Is you do not like your gravies sweet start with less sugar and then add salt. You can add more sugar later less than quarter teaspoon at a time. 11. Once this boils add paneer cubes and switch off the gas. 12. Garnish with a few flakes of saffron and serve hot with paratha or rice.
