I love Indian breakfast. Here is a quick recipe for early morning desi style breakfast. Ingredients 1 cup fine sooji 2 1/2 cups water 1 onions sliced 1 finely chopped green chili( use the longer chili. Add no heat but good flavor) 1/2 tsp ginger 1/2 cup grated coconut 1 tsp ghee 1/2 tsp cumin seeds 1/2 tsp mustard seeds A sprig of curry leaves 1/2 tsp sugar (optional) Salt to taste Let’s start cooking 1. Heat a heavy bottom pan. 2. Dry fist the sooji on medium to low flame till light brown and slightly fragrant. You do not want to over roast it. The more you roast it the drier your upma becomes. 3. Set the sooji aside. 4. In the same pan add ghee. 5. Once heated add cumin seeds, mustard seeds and a sprig of curry leaves 6. After they splutter add the onions 7. Sauté till the onions are translucent and not brown. 8. Add water, coconut, salt and sugar. 9. Bring to a boil. 10. Once the water boils taste to make sure it’s salted enough. 11. Slow the flame and add the sooji very slowly. Even one spoon at a time. If you add it all at once you will have a very lumpy upma. Be patient. And keep stirring. 12. Once well mixed cover for two to three minutes on low. This will help the sooji cook and the upma won’t be grainy. 13. Garnish with cilantro and serve with my coconut chutney .
