Tandoori Chicken Sandwich!

I love grilled cheese sandwiches. And if it has a chicken in it, it’s a bonus. Biting into a cheesy gooey grilled chicken cheese sandwich is what it probably made my dreams of! I always use the kids as an excuse to make one, but the truth would be that I make it for me. And served with curried wedges .... OMG... So here is a simple and quick recipe. We usually make a large enormous batch of tandoori chicken. And then divide into small batches and freeze to use later.. You can make the same sandwich with any leftover grilled chicken, grilled paneer, and even grated plain paneer. I also like to use boiled eggs. Also, use any mayonnaise you like. Plain mayo, tandoori Mayo, barbecue Mayo or peri-peri Mayo. If you can’t use Mayo use cream cheese!! How versatile is this sandwich!! Don’t you just love it?

Here is what you need.

2 cups shredded tandoori chicken

1/2 cup finely chopped onions

1/2 cup finely chopped green peppers

2 pods of garlic finely chopped

1/2 cup finely chopped red pepper.

1 finely chopped green chili (optional)

1/2 cup grated cheese

1/2 cup chipotle Mayo

. 4 slices of bread Oil or butter

Let’s get cooking!!

1. Mix all ingredients.

2. Spread on bread.

3. Toast on a low flame on both sides until crispy.
